 Post subject: Fish Vegetable Curry

We have lot of BBQ and baking recipes in this section but no curry recipes. Here is one.

We love fish curry and this time we decided to add some vegetables to it, cooking it in olive oil (healthy food :mrgreen: )

Ingredients
- Basa fish fillets (1 lb)
- Mix vegetables, peas, carrots, tomatoes, cauliflower, onions.
- Garlic and Ginger
- Spices: Salt, red chilies, coriander poweder, cumin seeds, ajvoin

Fry the onions and tomatoes in olive oil for a while. There is no need to make the onions brown which is the traditional way of cooking. Onions will remain visible till the end. Add the spices.

Add vegetables and some water. Let it cook for a while.

Add basa fillets, cut into small pieces (2-3 inch). Do not stir the curry as the fish pieces will break. Close the lid and let it cook for 30 minutes on low heat.

Fish Vegetable Curry is ready. Its very light and one can eat as much as one wants. Eat with naan / chapati.

That was a nice curry Sualeh. Very light and good to eat. Best thing was that it was devoid of that cooking oil floating on the top :lol: :text-bravo:

Closing the lid of the pan and letting it cook on a low heat is the key.....

Vegetable fish and shrimp curries are very good. I don't know why it is not done in Pakistan very often. May be the people dont like the taste of fish with vegetables and only like to fry or BBQ it. Try fish vegetable curry and it is very good. :drool:
