 Post subject: BBQ Coots.... with a tinge of Ajvoin & Olive Oil

Many people do not like to eat Coots. I think most of them never get a chance to eat coots so have no idea of their taste. In my view, Coots are amongst the tastiest of waterfowl. Though sense of taste differs from person to person but I have found them to be one of the top most, along with Purple Gallinule (nela kukar), barheaded geese and mallards.

Coots taste good any way you prepare them. BBQ, steam roast, karahi or simple curry. I like Coot BBQ the most and here is one of the recipes that I do....

Ingredients
    - Skinned Coots.
    - Spices: Salt, red chiliy powder, cumin seed powder, fresh corriander
    - Youghart
    - Garlic & ginger paste, lots of it.
    - Olive oil (three spoon) & Ajvoin

:arrow: Mix salt, red chillies, cumin seed powder, fresh corriander, garlic & ginger paste in the youghart. Marinate the Coots in the paste for two hours.

:arrow: Mix ajvoin in olive oil and make a paste. Keep it handy as it will be used while the Coots are being BBQ.

:arrow: BBQ the coots on light heat. Please make sure that coal is not burning red. When it turns into sort of ash, that heat is the best for making a tender BBQ. More heat will burn the meat & spices from outside and the meat inside will remain uncooked.

:arrow: Keep turning the sticks regularly, ensuring that unfrom heat is provided to entire meat. Keep applying olive oil / ajvoin paste on the meat while it is being BBQ. This will keep the meat tender and juicy.

BBQ Coots are ready. Consume them while they are still very hot. Don't let it cool down as it will spoil the taste. :drool: :drool:

Coots are one of the most widely available bird in Pakistan for hunting. The bird's meat has some smell when preparing but when it is cooked with coriander, it becomes perfect. The other bird Neela Kukkar is better than coots i will have to admit but that is only because it has softer meat and in layers of muscles. Coots like other ducks and mallards has a single piece of muscle at the chest and its legs are not just even a bite. The way KBW has cooked seems like it is well worth cooking again n again. I will try it asap i have some coots in hands.

Sir thanks for the recipe!

I don't know who are those people who don't like coots?! :think: Recently I called a few friends over and served them BBQ Rabbits and Coots. They had never eaten hunted meat before, and afterwards they voted Coot as the tastier amongst the two!

Coots when BBQ'ed like this taste awesome.. and were my favourite for years.. BUT after looking at the above pics.. there was surely something missing in my cooking.. SLURP SLURP!!! already mouth is watering...

What about curlews. I think they are the tastiest. Neela Kukkar (Purple Gallinule) is also very good. :drool: :drool:

Curlews, purple gallinule (neela kukar) and coots, all are very tasty, depends how you cook them. But remember this is game meat and not tasteless poultry chicken. If cooking is not good, most of the waterfowl won't taste good to a person who is not used to eating game meat.
