 Post subject: Rabbit.... BBQ with Lemon and Coriander

For all those who do not consider eating rabbit sinful..... here is a recipe to try :ugeek:

Ingredients
    - A skinned whole rabbit. Do not cut in pieces.
    - Spices: Salt, red chiliy powder, cumin seed powder, fresh corriander, ajvoin
    - Lemon juice
    - Garlic paste
    - Olive oil (one spoon)

:arrow: If the rabbit has been shot from a green area, apply some salt on the rabbit and hang it for few hours. Let the water drain down. If the rabbit has been shot from desert or very dry mountains like Balochistan, it will have a much better (dry) meat. No need to hang it for long.

:arrow: Marinate in a paste of garlic, salt (just enough because some salt has already been applied), red chilies, cumin seed powder for two hours.

:arrow: Grind fresh coriander leaves and ajvoin in lemon juice. Mix a tea spoon full of olive oil in it. I don't know what ajvoin is called in English. Can someone clarify.

:arrow: BBQ whole rabbit on low heat. Make sure that coal is not burning red hot. Let it cool down a little....

:arrow: Keep applying the lemon coriander olive oil paste on the meat while it is being BBQ. It will keep the meat tender. The fumes would be so mouth watering that it will be difficult to wait. But don't be so impatient. Let it BBQ in low heat for a while. Keep turning over the meat regularly, making sure that it doesn't burn.

I think it is called as Bishop's weed and is only found in and around Pakistan, India, Arab countries and max till Bangladesh. Developing the taste for it is normally hard for most of the western taste buds but is lovely for bringing out the taste of the raw game meat. The smell is making me... :character-oldtimer: :teasing-binkybaby: and ultimately.. :violence-shootself: :text-bravo: .. already have my mouth watering..
